I have seen the best of cooks. They’re cooking, cooking, cooking and then they taste it. I don’t think it’s a very sanitary habit, but sometimes they’ll take their finger and dip it, and then put the finger in the mouth. That one taste verifies all action that the chef did. No questions need to be asked. No debate needs to be had. No ruling has to take place. No looking in a reference book is needed. None of that. Taste, and it’s done.
This process is called knowing. You have seen people going to climb a ladder. They grab it shake it, make sure it is sturdy. Can’t they see it’s sturdy? No. They can see it’s there. But whether it is sturdy or not comes from feel. Why are you alive? You’ll never know the answer in words. But you can feel it.
